- 180g mezze maniche
- 100g broccoli
- 70g almonds
- 100g cream
- olive oil
- mint leaves
Put a pot full of water on the stove and bring it to boil. Salt it and then put the pasta in it.
Boil broccoli in salty for 10 minutes, then drain them.
In an electric blender add broccoli, cream, 20g almonds, a bit of broccoli cooking water, some chopped mint leaves, salt, a bit of olive oil, and blend all, to obtain a smooth sauce.
Roast the rest of your almonds.
Drain the pasta when is ready.
Add the sauce to the pasta and stir all to amalgamate. Add a bit of pasta cooking water if it is too thick.
Add your roasted almonds on top
