FARFALLE WITH FRIED AUBERGINES AND TOMATO SAUCE

Hola guys! This is one of my favourite pasta sauce, very popular in the south of Italy! Pasta alla norma!

Ingredients

  • 200g aubergine
  • 250g tomatoes
  • a garlic clove
  • parmisan
  • olive oil
  • fresh basil
  • 180g farfalle
  • salt
  • sunflower oil

STEP 1

Boil the tomatoes for 15 minutes and then pass them in a vegetable mill. Leave it apart.

STEP 2

Cut the aubergines in cubes. Put them in a basin with water and salt and leave them there for around 30 minutes.

STEP 3

Fry the aubergines in plenty of oil.

STEP 4

In a pan put 2 spoons of olive oil, a garlic clove and stir-fry for some seconds, add tomato sauce, pinch of salt and fresh basil. Cook the sauce for ten minutes, take the garlic clove off and leave it apart.

STEP 5

Put the pot on the stove and bring it to boil. Salt it and then put the pasta in it.

STEP 6

When the pasta is nearly ready drain it and put it in the pan with the tomato sauce, heating everything a low heat.

STEP 7

Turn off the stove, add fried aubergines and parmisan.
