PENNE WITH BEANS, CHESTNUTS AND PARMESAN CHEESE

SERVING: 2 people

This dish is perfect during the autumn period, and if you love chestnuts like me you should try it!

Ingredients

  • 30g beans
  • 40g chestnuts
  • a little piece of red onion
  • parmisan
  • olive oil
  • 180g penne
  • salt

STEP 1

Boil beans for around 1 hour, leave them apart.

STEP 2

Do a little cut on each chestnut and boil them for 30 minutes. Drain them and wait that the chestnuts become cool. After that peal and smash them.

STEP 3

Fill a pot up with water. Put the pot on the stove and bring it to boil. Salt it and then put the pasta in it.

STEP 4

Put in a pan oil, minced onion, chestnut and beans. Stir-fry all for 10 minutes a low heat. If it become too dry add a little bit of cooking water.

STEP 5

Drain the pasta when is nearly ready and stir- fry it with the sauce.

Add parmesan on the pasta.
